Aubergine rolls

A great little starter or mezze dish.

  • 1 aubergine
  • Mozzarella
  • Olive oil
  • Basil
  • Sun dried tomatoes, finely cut
  • Parmesan
Method/steps
  1. Slice the aubergine lengthways into slabs about 5ml thick
  2. Pour a little oil onto a plate and spread it out with your fingers
  3. Wipe each slab front and back with oil
  4. Fry gently on both sides for about 2-3 mins a side, until golden
  5. Lay out the slabs and on top of each one, lay some thinly cut mozzarella, torn basil and the tomatoes. Top with parmesan
  6. Roll the slab up and secure with a cocktail stick
  7. Bake in the oven on a medium heat until the mozzarella has melted
Additional tips
Also great with olives, capers...
