Basquian Lemon Shrimp

  • 6-8 cooked and shelled prawns
  • lemon
  • garlic clove
  • red onion
  • black olives
  • anchovies
  • sherry vinegar
  • olive oil
  • cayenne pepper
  • smoked paprika
Method/steps
  1. In a bowl, mix together zest from half a lemon, its juice, a finely minced garlic clove, a small spoonful of finely chopped red onion, a small handful of pitted and coarsely chopped oil-cured black olives, a few coarsely chopped smoked anchovies, a dash of aged sherry vinegar, a glug of extra-virgin olive oil, and a pinch of cayenne pepper and smoked paprika.
  2. Toss in six to eight cooked and shelled prawns and season with sea salt and cracked black pepper. Serve over a few thick slices of crusty bread
