'Breakfast like a king'muffins

12 large muffins
  • 300g plain wholemeal flour
  • 50g rolled porrige oats + extra for decoration
  • 3heaped tsp baking powder
  • 1/4 tsp mixed spice
  • 1/2 tsp ground cinnamon
  • 100g dried cranberries
  • 100g dried apricots - chopped
  • 50g pecans - chopped
  • 50g caster sugar
  • 100ml sunflower oil
  • 150ml natural yoghurt
  • 150ml milk
  • 1 medium egg - beaten
  • 2 medium bananas - mashed
  • 1 tsp vanilla extract
  • 2 small apples - grated
  • 100g peeled carrot - grated
  • DECORATION
  • Oats, pumpkin seeds and sunflower seeds
Method/steps
  1. Preheat oven 190 C/gas mark 5
  2. Grease 12 large cup muffin tin
  3. Combine the first 9 ingredients together in a large bowl
  4. Combine the rest of the ingredients in a second bowl
  5. Add to the dry ingredients and mix to just combine
  6. Divide mixture into the prepared tin
  7. Sprinkle with the oat and seed mix
  8. Bake for 20 minutes or until an inserted skewer comes out clean
  9. Cool in the tin for 5 minutes
  10. Transfer to a rack
  11. Serve warm
