'Breakfast like a king'muffins

12 large muffins
- 300g plain wholemeal flour
- 50g rolled porrige oats + extra for decoration
- 3heaped tsp baking powder
- 1/4 tsp mixed spice
- 1/2 tsp ground cinnamon
- 100g dried cranberries
- 100g dried apricots - chopped
- 50g pecans - chopped
- 50g caster sugar
- 100ml sunflower oil
- 150ml natural yoghurt
- 150ml milk
- 1 medium egg - beaten
- 2 medium bananas - mashed
- 1 tsp vanilla extract
- 2 small apples - grated
- 100g peeled carrot - grated
- DECORATION
- Oats, pumpkin seeds and sunflower seeds
Method/steps
- Preheat oven 190 C/gas mark 5
- Grease 12 large cup muffin tin
- Combine the first 9 ingredients together in a large bowl
- Combine the rest of the ingredients in a second bowl
- Add to the dry ingredients and mix to just combine
- Divide mixture into the prepared tin
- Sprinkle with the oat and seed mix
- Bake for 20 minutes or until an inserted skewer comes out clean
- Cool in the tin for 5 minutes
- Transfer to a rack
- Serve warm
