Broccoli and Parmesan Soup
Broccoli and Parmesan Soup

Grown up soup, healthy and full of goodness and flavour. The parmesan gives it an wonderful added depth.

1 large head broccoli
1 onion
1 medium potato
2 large cloves garlic
800 ml veg/chicken stock
100ml milk
Pinch of thyme
Generous handful parmesan
Olive oil, S&P
2 tbsp creme fraiche (optional)

Method/steps
  1. Chop onion, and saute gently in a pool of olive oil for 5-10 mins, salt
  2. Chop garlic finely and add to pan with thyme
  3. Cube potato (leave skin on) into small 2cm cubes, cut broccoli into medium florets, add to pan stir round and pour in stock, S&P
  4. After 15-20 minutes, take of heat, add parmesan, milk and creme fraiche (if using), and blend until smooth (a stick is ideal)
  5. Warm through and serve with some nice bread, an extra sprinkling of parmesan and a big twist of black pepper.
Additional tips
If you have a parmesan rind, throw it in with the brocoli and fish out before blending.
