Chicken, leek and barley stew

This stew takes time in the oven but next to none to prepare. Delicious and warming, the cider stock gives a great rich flavour.

Chicken legs/thighs - approx 500g
2 medium leeks
1 onion
1 carrot
1 handful pearl barley
500ml cider
1 tablespoon sage (or you could use rosemary/thyme etc)
2 bay leaves
Olive oil
S&P

Method/steps
  1. Heat oven to 150 C
  2. Chop veg into chunks
  3. Put a casserole dish on the stove top and add 15cm oil, heat and add chicken pieces to brown
  4. Once golden add all other ingredients, S&P
  5. Put in oven for 2.5 hours
  6. Serve with bread and more cider (chiiled), maybe also a little something green and steamed
