chickpea and chorizo with balsamic and thyme

  • 1 tbs thyme leaves
  • 125ml balsamic vinegar
  • 2 tbsp olive oil
  • 2 cloves garlic
  • salt and pepper
  • 2 cans of chickpeas
  • 3 chorizos sliced
Method/steps
  1. place thyme, balsamic, oil, garlic salt and pepper in a small food processor and whiz until finely chopped
  2. place mixture in a bowl with the chickpeas and toss
  3. heat a frying pan over a high heat and add the chorizo and cook for 2-3 minutes
  4. add the chickpea mixture and cook for 2-3 minutes
  5. to serve spoon into individual bowls with the pan juices
