chickpea and chorizo with balsamic and thyme

Quick and tasty, packed with flavour.

- 1 tbs thyme leaves
- 125ml balsamic vinegar
- 2 tbsp olive oil
- 2 cloves garlic
- salt and pepper
- 2 cans of chickpeas
- 3 chorizos sliced
Method/steps
- place thyme, balsamic, oil, garlic salt and pepper in a small food processor and whiz until finely chopped
- place mixture in a bowl with the chickpeas and toss
- heat a frying pan over a high heat and add the chorizo and cook for 2-3 minutes
- add the chickpea mixture and cook for 2-3 minutes
- to serve spoon into individual bowls with the pan juices
