Chocolate Courgette Cake

Ok, it sounds like a risk, but this is a wonderful moist chocolate cake which is great for using up courgettes at the end of that glut and when you have run out of courgette recipes.

  • 120g butter (softened)
  • 125 ml sunflower oil
  • 100g castor sugar
  • 200g soft brown sugar
  • 3 eggs, beaten
  • 130 ml milk
  • 350g plain flour
  • 2 tsp baking powder
  • 4 tbs cocoa
  • 450g courgettes, peeled and grated finely
  • 1 tsp vanilla
Method/steps
  1. Instructions:
  2. Line a 20 x 35 cm baking tray (or 2 sandwich tins) with baking paper and set oven to 190deg C/350 deg F.
  3. Mix the butter, oil and both sugars together until light and fluffy. Gradually add the eggs, one at a time and then the milk until mixed thoroughly.
  4. Sift the dry ingredients together and fold into the mixture. Stir in grated and peeled courgettes, vanilla and spoon into tin. Bake for 35-45 mins.
Additional tips
I strongly recommend a good fudge icing and to make it as a sandwich cake. Oh, and when you put a knife through it, it may look silky and uncooked, but if you break the cake in your hands you will see it is spongey and infact just perfect. Kids will never know there is veg in this, so best not to tell them!
