Chunky Rooties

This is a recipe for an alternative way of cooking your root veg. Crispy chunks of parsnip and potatoes etc. with rosemary and garlic. It's kid friendly but strong flavoured. Good for getting them used to a common but strong herb.

  • 1 small onion
  • 2 Parsnips
  • 4 potatoes
  • 1 small Butternut squash
  • 100g mushrooms
  • large knob of butter
  • 2 cloves of garlic
  • 2 tsp rosemary
Method/steps
  1. Fry one onion in a frying pan with a large knob of butter not oil
  2. add sliced mushrooms and a bit of garlic cook until soft
  3. add diced potatoes and parsnips and even some butternut squash if you're feeling racey!
  4. Sprinkle 2 tsp on rosemary (when serving it up for children crumble the rosemary between your fingers into dust so that it is less detectable)
  5. Place a lid on it and allow to cook on low heat for 15 to 20 min or so stirring regularly.
  6. once all the chunks are soft crank up the heat until edges and onions have caramelised.
