Courgette and Porcini Tagliatelle

A quick and tasty full flavoured veggie recipe. The Porcini mushrooms give it great depth.

- 2 medium courgettes
- 10 Porcini mushrooms
- 1 onion (red is nice for colour but any will do)
- 2 large cloves garlic
- 5 tagliatelle nests
- 1/2 pot creme fraiche
- handful grated paremesan
- olive oil
- splash of sherry
- S&P
Method/steps
- Put the Porcini mushrooms in a bowl with enough water to cover, and a splash of sherry, soak for 20-30 minutes
- 10 mins before they are finished soaking chop onion, finely, heat some oilve oil in a frying pan and fry gently for 10 minutes
- Chop Porcinis and garlic finely and add, with a big splash of the soaking water, to pan
- Ribbon the courgettes using a vegetable peeler into thin wide ribbons, add to pan
- Put pasta on to cook
- When pasta is done (5 mins) drain
- Add creme fraiche and parmesan to frying pan to warm through
- Mix with pasta and serve immediately, great on it's own followed with some bread and a salad
