Dan Dan Noodles

Classic Chinese Noodle dish.

  • 1 Beef or chicken stock cube
  • 500g Minced Beef
  • 2 tbsp runny honey
  • 300g wheat noodles
  • 4 handfuls of mixed greens eg pak choi spinach chinese greens etc
  • 4 gloves finely chopped garlic
  • 3 tbsp dark soy
  • 2 tsp szechuan pepper (or normal if you can't get it)
  • 5 tsp chilli oil
  • 2 spring onions finely chopped
  • 1 lime to serve
Method/steps
  1. crumble stock cube into a pan of water and put it on the heat
  2. Add the beef to a dry pan on a medium heat and keep it moving around until its golden and crunchy approx 10-15 minutes
  3. pour away fat and add honey and toss together to coat
  4. take the pan off the heat
  5. stir the noodles into the boiling stock and cook as instructed on the packet
  6. shred cabbage into 1cm strips and quarter bok choi
  7. when the noodles have 1 minute to go throw the greens into the stock as well to blanch them.
  8. Drain the whole lot reserving a mug full of cooking water
  9. tip noodles and veg and the reserved cooking water into a hot pan
  10. add garlic soy sauce szechuan pepper and chilli oil
  11. mix it up and divide between 4 bowls
  12. sprinkle over the beef and spring onions and squeeze some lime over the noodles
