Dan Dan Noodles

Classic Chinese Noodle dish.

- 1 Beef or chicken stock cube
- 500g Minced Beef
- 2 tbsp runny honey
- 300g wheat noodles
- 4 handfuls of mixed greens eg pak choi spinach chinese greens etc
- 4 gloves finely chopped garlic
- 3 tbsp dark soy
- 2 tsp szechuan pepper (or normal if you can't get it)
- 5 tsp chilli oil
- 2 spring onions finely chopped
- 1 lime to serve
Method/steps
- crumble stock cube into a pan of water and put it on the heat
- Add the beef to a dry pan on a medium heat and keep it moving around until its golden and crunchy approx 10-15 minutes
- pour away fat and add honey and toss together to coat
- take the pan off the heat
- stir the noodles into the boiling stock and cook as instructed on the packet
- shred cabbage into 1cm strips and quarter bok choi
- when the noodles have 1 minute to go throw the greens into the stock as well to blanch them.
- Drain the whole lot reserving a mug full of cooking water
- tip noodles and veg and the reserved cooking water into a hot pan
- add garlic soy sauce szechuan pepper and chilli oil
- mix it up and divide between 4 bowls
- sprinkle over the beef and spring onions and squeeze some lime over the noodles
