Solyanka, a russian soup by way of berlin - frau tee style!

1 x med onion - roughly chopped
2 x med carrots – peeled and cubed
3-4 potatoes – peeled and cubed
1 x celery stick - sliced
2 x cloves garlic – crushed
handful of black olives – roughly chopped
handful of capers – roughly chopped
chorizo – 100-150g – cubed (a nice big handful)
large handful of cherry tomatoes – cut in two
small sprig of fresh thyme & rosemary
2 x bay leaves
olive oil for frying
salt & pepper to taste
tomato puree
beef stock
half lemon, thinly sliced
small tub half fat creme fraiche

Method/steps
  1. Fry off all vegetables on a low heat to begin to soften in a heavy bottomed saucepan

  2. Add chorizo and fry for another 5 minutes or so

  3. Add boiling water, so it fills the pan 2 inches above the vegetables and chorizo. add a good quality beef stock cube and a squirt of tomato puree

  4. Add rosemary, thyme and bay leaves

  5. Simmer on a low heat for 20 or 30 mins

  6. Add olives, capers and lemon, simmer for another 10 mins Season with black pepper and salt, to taste

  7. Serve with a big dollop of creme fraiche and black bread

Additional tips
If you prefer it less lemony, add the lemons at the end of cooking
