Mummy's extra buttery fish pie

This one is really simple and great for getting some of those omega 6s in the kids too. This one is special because it's quick and saves on washing up because you only use one pan for the pie mix. You can use any white fish, but pick responsibly!

- 6 portions of frozen white fish
- 3 tablespoons of parsley
- 100g unsalted butter
- 100g peas
- 2 large carrots
- 100g sweetcorn
- three large red potatoes
- 100g mushrooms
- breadcrumbs
- cheeeeeeeeeeese!
- milk
- flour
Method/steps
- get one large saucepan place your fish and add enough milk just to cover the top of the fish.
- add butter and parsley,
- Put it on a low to medium heat, simmer for 10 to 15 min
- add finely diced carrots
- simmer for 5 more minutes, stiring regularly to break up the fish
- add your mushrooms and peas and sweetcorn
- simmer and stir regularly for about 10 min.
- boil and mash your potatoes.
- by now you fish mix should not have any big lumps of fish in it.
- add enough flour to thicken the sauce, make it quite thick as it will thin out when cooked.
- pour mix in to a oven dish and cover with mash.
- sprinkle of breadcrumbs and cheeeeeeeeeeese!
- bung in the oven for 20min at 220c.
