Pancetta and Sundried Tomato Pasta

A simple pasta for when you need a quick meal.

  • 2 cloves garlic
  • 1 small courgette
  • 2 small Pecorino peppers (chilli's)
  • A sprinkling of Pancetta (cubed)
  • A few sundried tomatoes
  • Mixed herbs
  • Grated Parmesan
  • 250g Pasta
  • Olive Oil
  • Lemon Juice
Method/steps
  1. Slice the courgette into small pieces and place in a fry pan on a low heat with a little olive oil.
  2. Dice the garlic and Pecorino peppers and place in the fry pan with the courgette.
  3. Add a generous amount of mixed herbs to the contents of the fry pan.
  4. While it is frying put the 250 grams pasta in boiling water for 12 mins.
  5. Once the courgette has been cooking for around 10 minutes, add in the sprinkling of Pancetta and sundried tomatoes for another 2 mins.
  6. Combine the pasta and the contents of the fry pan into two individual bowls.
  7. Add in a little olive oil (no more than a tea spoon) into each bowl and squeeze a little lemon juice on each serving.
  8. Stir through and add Grated Parmesan on top.
Additional tips
To make it vegetarian, simply leave out the Pancetta.
