- 1.5kg Aubergines
- 1kg Tomatoes peeled and chopped
- 80ml olive oil
- 500g green peppers seeded and sliced
- 500g of the best sausages you can get
- salt and pepper
Method/steps
- slice the aubergines into 1cm thick rounds and sprinkle with salt and let them drain in a colander for 1 hour.
- Meanwhile blitz the tomatoes in a food processor
- rinse the aubergines and squeeze out any excess water
- heat half the olive oil in a frying pan and add the aubergines and peppers and cook for 10-15 minutes until lightly browned then remove from heat
- Cook the sausage in a pan over a medium heat untill they release their fat
- drain and discard the fat
- heat the remain oil in a pan and return the sausages and add the tomatoes
- simmer for 20 minutes until sauce had thickened
- Preheat and oven to 180C
- remover sausages and place in an ovenproof platter
- arrange aubergines and peppers around the sausages and spoon the sauce on top
- season and cover with foil and bake for 15 minutes
