Peppers with Sausages

  • 1.5kg Aubergines
  • 1kg Tomatoes peeled and chopped
  • 80ml olive oil
  • 500g green peppers seeded and sliced
  • 500g of the best sausages you can get
  • salt and pepper
Method/steps
  1. slice the aubergines into 1cm thick rounds and sprinkle with salt and let them drain in a colander for 1 hour.
  2. Meanwhile blitz the tomatoes in a food processor
  3. rinse the aubergines and squeeze out any excess water
  4. heat half the olive oil in a frying pan and add the aubergines and peppers and cook for 10-15 minutes until lightly browned then remove from heat
  5. Cook the sausage in a pan over a medium heat untill they release their fat
  6. drain and discard the fat
  7. heat the remain oil in a pan and return the sausages and add the tomatoes
  8. simmer for 20 minutes until sauce had thickened
  9. Preheat and oven to 180C
  10. remover sausages and place in an ovenproof platter
  11. arrange aubergines and peppers around the sausages and spoon the sauce on top
  12. season and cover with foil and bake for 15 minutes
