Quick and light cauliflower cheese

This is a quick and light alternative to traditional cauliflower cheese. Takes just a few minutes, is very easy, and healthy.

  • 1/2 head of cauliflower (or a whole head if it's small)
  • 200g creme fraiche (I use 1/2 fat)
  • 200g cheddar
  • S&P
Method/steps
  1. Put the kettle on
  2. Chop cauliflower into small florettes
  3. Steam for 6-7 minutes (or until just done)
  4. While cauli is steaming grate cheese
  5. When cauli is done, cooked but with a nice bit of bite left, combine with cheese and creme fraiche
  6. Season and serve - great with sausages or just a bit of bread and salad for a quick and easy midweek supper.
