Quick and light cauliflower cheese
This is a quick and light alternative to traditional cauliflower cheese. Takes just a few minutes, is very easy, and healthy.

- 1/2 head of cauliflower (or a whole head if it's small)
- 200g creme fraiche (I use 1/2 fat)
- 200g cheddar
- S&P
Method/steps
- Put the kettle on
- Chop cauliflower into small florettes
- Steam for 6-7 minutes (or until just done)
- While cauli is steaming grate cheese
- When cauli is done, cooked but with a nice bit of bite left, combine with cheese and creme fraiche
- Season and serve - great with sausages or just a bit of bread and salad for a quick and easy midweek supper.
