smoked trout and garlic potato croquettes

  • 500g maris piper potatoes peeled and chopped
  • 1 clove of garlic crushed
  • 60ml olive oil
  • 200g smoked trout fillets, flaked
  • salt and pepper
  • 150g breadcrumbs (panko are the best ones)
  • 2 eggs lightly beaten
  • veg oil for frying
  • lemon wedges
Method/steps
  1. place the potatoes in a large pan with cold salted water and bring to the boil
  2. cook for 15-20 minutes until tender
  3. drain well and mash them
  4. add the garlic, oil, trout, slt and pepper and stir to combine
  5. set aside to cool
  6. dampen hands and mould 1 tablespoon into an egg shape
  7. repeat until you run out
  8. roll the croquettes in breadcrumbs, carefully dip into the eggs then roll in breadcrumbs again
  9. heat veg oil in frying pan and cook the croquettes turning regularly for 3-4 minutes
  10. drain on kitchen roll
  11. sprinkle with salt and serve with lemon wedges
