smoked trout and garlic potato croquettes

- 500g maris piper potatoes peeled and chopped
- 1 clove of garlic crushed
- 60ml olive oil
- 200g smoked trout fillets, flaked
- salt and pepper
- 150g breadcrumbs (panko are the best ones)
- 2 eggs lightly beaten
- veg oil for frying
- lemon wedges
Method/steps
- place the potatoes in a large pan with cold salted water and bring to the boil
- cook for 15-20 minutes until tender
- drain well and mash them
- add the garlic, oil, trout, slt and pepper and stir to combine
- set aside to cool
- dampen hands and mould 1 tablespoon into an egg shape
- repeat until you run out
- roll the croquettes in breadcrumbs, carefully dip into the eggs then roll in breadcrumbs again
- heat veg oil in frying pan and cook the croquettes turning regularly for 3-4 minutes
- drain on kitchen roll
- sprinkle with salt and serve with lemon wedges
